These Sumac-Spiced Chicken Skewers are a simple yet vibrant dish that brings the tangy, citrusy depth of sumac to the forefront. Inspired by Levantine Street food, this recipe is a fantastic way to transform everyday chicken breast into something exotic and mouthwatering with just a few ingredients. Perfect for grilling season or quick weekday dinners, these skewers pair beautifully with fresh salads, warm pita, or a cooling yogurt dip. A squeeze of lemon at the end adds brightness and ties the dish together.
Marinate the Chicken
In a large bowl, combine the olive oil, minced garlic, sumac, salt, and pepper. Stir to create a flavorful paste.
Add the chicken cubes to the bowl and toss well to ensure each piece is thoroughly coated. For deeper flavor, cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours if time allows.
Thread the marinated chicken cubes onto metal or pre-soaked wooden skewers, spacing them slightly to ensure even cooking. If using wooden skewers, soak them in water for 20–30 minutes beforehand to prevent burning.
Preheat your grill or grill pan to medium-high heat. Place the skewers on the hot grill and cook for 10–12 minutes, turning every few minutes to ensure even cooking and beautiful grill marks. The chicken should be slightly charred on the edges and cooked through (internal temperature should reach 165°F / 74°C).
Transfer the skewers to a serving platter. Squeeze fresh lemon juice over the top just before serving for a bright, zesty finish. Garnish with extra sumac if desired.
