These Sumac Potato Wedges are a crispy, golden, and flavor-packed twist on a classic comfort food. Preheat the Oven
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
Place the potato wedges in a large mixing bowl. Add the olive oil, sumac, garlic powder, and a generous pinch of salt. Toss everything together until the wedges are well coated with the seasoning.
Tip: For extra crispiness, you can soak the raw potato wedges in cold water for 30 minutes beforehand to remove excess starch. Dry thoroughly before seasoning.
Spread the seasoned wedges on the prepared baking sheet in a single layer, cut side down. Make sure the pieces aren’t crowded—this helps them roast instead of steam.
Roast in the preheated oven for 25–30 minutes, flipping halfway through, until the wedges are golden brown, crispy on the edges, and tender inside.
