Ingredients

  • 4 large potatoes (Russet or Yukon Gold), scrubbed and cut into thick wedges
  • 2 tbsp olive oil
  • 2 tbsp ground sumac
  • 1 tsp garlic powder
  • Salt, to taste

Instructions

Preheat the Oven

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

  1. Season the Potatoes

Place the potato wedges in a large mixing bowl. Add the olive oil, sumac, garlic powder, and a generous pinch of salt. Toss everything together until the wedges are well coated with the seasoning.

Tip: For extra crispiness, you can soak the raw potato wedges in cold water for 30 minutes beforehand to remove excess starch. Dry thoroughly before seasoning.

  1. Arrange for Roasting

Spread the seasoned wedges on the prepared baking sheet in a single layer, cut side down. Make sure the pieces aren’t crowded—this helps them roast instead of steam.

  1. Roast to Perfection

Roast in the preheated oven for 25–30 minutes, flipping halfway through, until the wedges are golden brown, crispy on the edges, and tender inside.

  1. Serve

Remove from the oven and let cool slightly. Serve hot with your favorite dipping sauce—like garlic mayo, spiced ketchup, or a creamy tahini yogurt dip.

Serving Suggestions

  • Great alongside sumac chicken skewers, grilled lamb chops, or shawarma wraps
  • Serve in a mezze platter with hummus, pickles, and olives
  • Top with crumbled feta, fresh parsley, or a drizzle of lemon juice for extra brightness
