Ingredients
- 250g halloumi cheese, cut into large cubes
- 1 red bell pepper, chopped into 1.5″ pieces
- 1 small zucchini, sliced into thick rounds
- 1 tablespoon olive oil
- 1 tablespoon ground sumac
- Black pepper, to taste
- Wooden skewers (soaked in water for 20 minutes if grilling)
Instructions
- Marinate the Ingredients
In a medium bowl, toss the halloumi cubes and chopped vegetables with olive oil, sumac, and black pepper. Let sit for 5–10 minutes to allow flavors to absorb.
- Assemble the Skewers
Thread the marinated ingredients onto the skewers, alternating between cheese, zucchini, and bell pepper. Leave a bit of space between each piece to ensure even grilling.
- Grill the Skewers
Heat a grill pan or outdoor grill over medium-high heat. Grill the skewers for about 8–10 minutes, turning occasionally, until the vegetables are tender and the halloumi is golden with grill marks.
