Ingredients

  • 1 lb (450 g) beef sirloin, trimmed and cut into 1½-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp ground sumac
  • 1 tbsp minced garlic (about 2–3 cloves)
  • Salt and freshly ground black pepper, to taste
  • Metal or soaked wooden skewers

Instructions

1. Prepare the Marinade

In a large bowl, whisk together the olive oil, sumac, minced garlic, salt, and pepper until well combined.

  1. Marinate the Beef

Add the beef cubes to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor and tenderness.

Tip: Bring beef to room temperature for 20–30 minutes before grilling to ensure even cooking.

  1. Thread the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated beef cubes onto the skewers, spacing them slightly to allow for even heat circulation.

  1. Grill the Kabobs

Preheat a grill or grill pan to medium-high heat. Lightly oil the grates if needed. Place the skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes to sear all sides, until the beef is charred outside and cooked to your preferred doneness.

  1. Rest and Serve
