Ingredients

  • 4 large bell peppers, tops removed
  • 1 chicken breast, diced
  • 1 tsp chicken shawarma spice
  • 1 tbsp olive oil
  • 1/2 cup cooked rice
  • 1/4 cup diced tomatoes
  • 2 tbsp chopped parsley
  • Salt & pepper
  • 1/4 cup grated cheese (optional)

Instructions

Cook Chicken
Sauté chicken with olive oil and shawarma spice until no longer pink, about 7 minutes.

Prep Filling
Mix chicken with rice, tomatoes, parsley, salt, and pepper.

Stuff Peppers
Fill peppers with mixture. Top with cheese if using.

Bake
Set in a baking dish with a little water. Cover and bake at 375°F for 25–30 minutes, until peppers are tender.

Serve
Let rest 5 minutes before serving.
