Intro
This creamy, vibrant dip combines roasted beets with tangy feta and the smoky-citrus twist of loomi. It’s a show-stopping starter that earns its place on any mezze board.
Ingredients
- 3 medium beets, scrubbed and trimmed
- 2 tbsp olive oil
- ½ tsp salt
- 2 oz feta cheese
- 1–2 loomi pods, crushed
- 2 tbsp Greek yogurt
- Zest & juice of ½ lemon
- Fresh dill, for garnish
Instructions
Roast Beets
- Preheat oven to 400°F.
- Toss beets in olive oil and salt; wrap in foil and roast 35min until tender.
Blend Dip
- Once cool, peel beets and roughly chop.
- In a food processor, combine beets, feta, crushed loomi, yogurt, lemon zest & juice. Blend until smooth.
Serve
- Transfer to a bowl, garnish with dill and a drizzle of olive oil.

Serve chilled with pita chips, cucumber slices, or grilled veggies.
