Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp Moroccan Harissa spice
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) chickpeas, drained
  • 4 eggs
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Sauté the Aromatics
    Heat oil in a skillet over medium heat. Add onion and garlic; cook until softened.
  • Add the Spice
    Stir in Harissa and cook for 1 minute to bloom the spices.
  • Simmer the Sauce
    Pour in crushed tomatoes and chickpeas. Simmer for 10 minutes, stirring occasionally.
  • Poach the Eggs
    Create wells in the sauce and crack in the eggs. Cover and cook 5–7 minutes, until whites are set.
  • Serve
    Garnish with parsley and serve with crusty bread.
