Ingredients

For the Dough:

  • 4 cups (480g) all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp instant yeast
  • 2 tsp salt
  • 1½ cups (360g) lukewarm whole milk
  • 4 tbsp softened butter

For the Filling:

  • 1 cup (227g) softened butter
  • 2–3 garlic heads, roasted
  • 3–4 tbsp chopped parsley
  • 3–4 tbsp Zaatar mix
  • 2 cups (225g) shredded mozzarella

Instructions

  • Make the Dough
    In a stand mixer, whisk together flour, sugar, yeast, and salt. Add warm milk and butter gradually and knead for 5–6 minutes until smooth. Transfer to a greased bowl, cover, and rise for 2 hours until doubled.
  • Prepare the Filling
    In a bowl, mash the roasted garlic and mix with softened butter, chopped parsley, and Zaatar.
  • Roll and Layer
    Roll the dough into a large rectangle. Spread the garlic-Zaatar butter and sprinkle with cheese. Cut into squares, stack them, and arrange vertically in a greased loaf pan.
  • Final Rise and Bake
    Let rise again for 30 minutes. Brush top with butter. Bake at 325°F (160°C) for 45–50 minutes until golden brown.
  • Serve
    Cool slightly before pulling apart and serving warm.
