Ingredients

For the Dough

  • 4 cups (480g) all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp instant yeast
  • 2 tsp salt
  • 1½ cups (360g) lukewarm whole milk
  • 4 tbsp softened butter

For the Filling

  • 1 cup (227g) softened butter
  • 2–3 garlic heads, roasted
  • 3–4 tbsp chopped parsley
  • 3–4 tbsp zaatar mix
  • 2 cups (225g) shredded mozzarella

Instructions

  • Make the Dough
    In a mixer bowl, combine flour, sugar, yeast, and salt. Gradually add milk and butter. Knead on medium speed for 5 minutes. Transfer to a greased bowl and let rise for about 2 hours, or until doubled.
  • Prepare the Filling
    Mash roasted garlic into the softened butter. Mix in chopped parsley and zaatar.
  • Assemble the Bread
    Roll out dough into a large rectangle. Spread the garlic-zaatar butter evenly and sprinkle with mozzarella. Cut into squares and stack them vertically in a greased loaf pan.
  • Second Rise & Bake
    Let rise another 30 minutes. Brush top with melted butter. Bake at 325°F (160°C) for 45–50 minutes until golden brown.
