Intro
Garlic & Zaatar Pull-Apart Bread is a showstopping side dish with layers of fluffy dough, fragrant zaatar, and rich garlic butter. Perfect for sharing, this bread pulls apart into cheesy, herby slices ideal for dipping or snacking.
Ingredients
For the Dough
- 4 cups (480g) all-purpose flour
- 3 tbsp sugar
- 1 tbsp instant yeast
- 2 tsp salt
- 1½ cups (360g) lukewarm whole milk
- 4 tbsp softened butter
For the Filling
- 1 cup (227g) softened butter
- 2–3 garlic heads, roasted
- 3–4 tbsp chopped parsley
- 3–4 tbsp zaatar mix
- 2 cups (225g) shredded mozzarella
Instructions
- Make the Dough
In a mixer bowl, combine flour, sugar, yeast, and salt. Gradually add milk and butter. Knead on medium speed for 5 minutes. Transfer to a greased bowl and let rise for about 2 hours, or until doubled.
- Prepare the Filling
Mash roasted garlic into the softened butter. Mix in chopped parsley and zaatar.
- Assemble the Bread
Roll out dough into a large rectangle. Spread the garlic-zaatar butter evenly and sprinkle with mozzarella. Cut into squares and stack them vertically in a greased loaf pan.
- Second Rise & Bake
Let rise another 30 minutes. Brush top with melted butter. Bake at 325°F (160°C) for 45–50 minutes until golden brown.
