Intro

A fresh, vibrant salad topped with crispy pita chips and tossed in a tangy dressing made with sumac, lemon, and pomegranate molasses—an essential Middle Eastern classic.

Ingredients

For the Salad:

  • 2 heads romaine lettuce, washed and chopped
  • 3 Persian cucumbers (or 1 large English cucumber), chopped
  • 6 medium tomatoes, chopped
  • 1 bell pepper, chopped
  • 8 radishes, thinly sliced
  • 4 green onions or 1 large red onion, sliced
  • ½ cup (20 g) fresh parsley, chopped
  • 2 large pita breads, cut into small pieces and deep-fried until golden

For the Dressing:

  • 2 tbsp (16 g) sumac
  • Juice of 2 lemons (about 6 tbsp / 90 ml)
  • 4 tbsp (60 ml) pomegranate molasses (the secret ingredient!)
  • 4 tbsp (60 ml) good-quality olive oil
  • 1 tbsp (2 g) dried mint (optional)
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  • Prepare the vegetables: Wash, dry, and chop the lettuce. Dice the cucumbers, tomatoes, and bell pepper. Slice the radishes and green onions (or red onion). Chop the parsley. Combine all in a large salad bowl.
  • Fry the pita: Cut pita into small pieces and deep-fry until golden and crispy. Set aside on paper towels to drain excess oil.
  • Make the dressing: In a small bowl, whisk together the pomegranate molasses, lemon juice, minced garlic, sumac, dried mint (if using), salt, and pepper. Gradually drizzle in the olive oil while whisking until emulsified.
  • Assemble: Pour the dressing over the salad just before serving, toss well, and top with the crispy pita chips.
  • Enjoy immediately for the best crunch!
