Ingredients

  • 2 cups fresh or thawed corn kernels
  • ½ cup flour
  • 2 eggs, beaten
  • 2 scallions, finely sliced
  • 1 teaspoon Aleppo pepper
  • Salt and pepper to taste
  • Olive oil for frying

Sauce:

  • ½ cup Greek yogurt
  • 1 tablespoon chopped scallion
  • 1 teaspoon lemon juice
  • Salt to taste

Instructions

1.Make the Fritter Batter
In a mixing bowl, combine corn, flour, eggs, scallion, Aleppo pepper, salt, and pepper. Stir until a thick batter forms.

2.Cook the Fritters
Heat olive oil in a skillet over medium heat. Drop the batter by 2-tablespoon scoops into the pan, flattening each slightly. Cook for 2–3 minutes per side, or until golden and crisp.

3.Prepare the Sauce
In a small bowl, whisk together all sauce ingredients until smooth and creamy.

4.Serve
Serve the hot fritters immediately with the sauce on the side for dipping or drizzling.
