This warming lentil and lamb soup is rich, hearty, and spiced with fragrant 7 spice to evoke Levantine comfort food. The tender ground lamb adds savory depth, while red lentils provide body and nutrition. Ideal for cool evenings or make-ahead lunches.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • ½ lb ground lamb
  • 1½ tsp 7 spice
  • 1 cup red lentils, rinsed
  • 1 carrot, diced
  • 5 cups vegetable or chicken broth
  • 1 tbsp tomato paste
  • Salt and pepper, to taste
  • Juice of ½ lemon

Instructions

  • Sauté Aromatics and Lamb
    Heat olive oil in a pot. Sauté onion and garlic until fragrant, then add lamb and cook until browned.
  • Add Spices and Vegetables
    Stir in 7 spice, tomato paste, lentils, and carrots. Cook for 2 minutes.
  • Simmer Soup
    Add broth and bring to a boil. Reduce heat and simmer for 30–35 minutes until lentils are soft and soup is thick.
  • Finish and Serve
    Season with salt, pepper, and lemon juice. Serve hot with warm bread.
  • Serving Suggestions
    Top with fresh parsley or a swirl of yogurt. Serve with pita chips or fattoush on the side.
