Ingredients

  • 2 medium eggplants, sliced into ½-inch rounds
  • 3 tbsp olive oil
  • 1 tsp 7 spice
  • Salt to taste
  • ½ cup tahini
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • Water, to thin
  • 4 flatbreads
  • Fresh mint and parsley, chopped

Instructions

  • Marinate the Eggplant
    Brush eggplant slices with olive oil, sprinkle with 7 spice and salt. Let sit 10 minutes.
  • Grill the Eggplant
    Grill on high heat for 5–6 minutes per side until tender and charred.
