Ingredients

  • 1 can chickpeas, drained and mashed
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • 1 tsp 7 spice
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • Lettuce and cucumber for layering

Instructions

  • Mash the Chickpeas
    In a bowl, mash chickpeas until chunky.
  • Season the Mixture
    Stir in tahini, olive oil, 7 spice, lemon zest, lemon juice, salt, and pepper.
  • Assemble Sandwiches
    Spread mixture on bread and layer with lettuce and cucumber.
  • Serve
    Cut in halves and serve immediately.
