Intro

A Middle Eastern twist on a modern classic, these tacos use roasted cauliflower with 7 spice and serve it up with tahini slaw in warm tortillas.

Ingredients

  • 1 head cauliflower, chopped
  • 2 tbsp olive oil
  • 1 1/2 tsp 7 spice
  • Salt and pepper to taste
  • 1 cup shredded cabbage
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 4–6 tortillas
  • Fresh mint and pomegranate for garnish

Instructions

  • Roast the Cauliflower
    Preheat oven to 425°F (220°C). Toss cauliflower with olive oil, 7 spice, salt, and pepper. Roast for 25 minutes.
  • Make the Slaw
    In a bowl, mix cabbage, tahini, lemon juice, and a pinch of salt.
  • Assemble the Tacos
    Warm tortillas. Fill with cauliflower, slaw, and garnish with mint and pomegranate.
  • Serve
    Serve immediately while warm.
