Ingredients
- 2 tbsp olive oil
- 1 large potato, diced
- 1 onion, thinly sliced
- 1 bell pepper, diced
- 1 tsp 7 spice
- Salt and pepper, to taste
- 4 eggs
- Chopped parsley, for garnish
Instructions
- Cook the Vegetables
Heat oil in a skillet. Add potatoes and cook until golden. Add onion and pepper, cook until softened.
