Intro

Fragrant rice pilaf scented with 7 spice and studded with golden raisins and toasted nuts. It’s a delicious accompaniment or base for grilled meats.

Ingredients

  • 1 cup basmati rice
  • 2 tbsp olive oil or butter
  • 1/4 cup chopped onion
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds or pine nuts
  • 1 tsp 7 spice
  • 1/2 tsp salt
  • 2 cups water or broth

Instructions

  • Sauté Aromatics
    Heat oil in a pot. Sauté onion until soft. Add raisins and nuts; cook 2 more minutes.
  • Add Rice and Spice
    Stir in rice, 7 spice, and salt.
  • Simmer
    Add water or broth, bring to boil, reduce heat, and cover. Simmer 15 minutes.
  • Fluff and Serve
    Let stand 5 minutes before fluffing with a fork.

Top with caramelized onions or serve alongside kebabs.
