Ingredients

  • 1 can chickpeas, drained
  • 1 small, sweet potato, diced
  • 1 tbsp olive oil
  • 1 tsp chicken shawarma spice
  • Salt & pepper
  • 4 large tortillas
  • 1 cup mixed salad greens
  • 1/4 red onion, thinly sliced
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp water

Instructions

Roast Chickpeas & Sweet Potato
Toss with oil and spice; roast at 400°F for 15 minutes.

Make Tahini Sauce
Whisk tahini, lemon juice, water, salt until smooth.

Assemble Wraps
Spread tahini on tortillas. Layer greens, roasted veggies, onion.

Roll & Serve
Wrap tightly and slice in half.
