Ingredients

  • 16 large white or cremini mushrooms, stems removed
  • 1 tablespoon olive oil
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup cream cheese
  • 1/4 cup crumbled feta
  • 1 1/2 teaspoons shawarma meat spice
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste
  • Olive oil spray or drizzle for baking

Instructions

  • Prepare the Filling
    In a skillet, heat olive oil over medium. Sauté shallot and garlic until soft, 2–3 minutes. Remove from heat.
  • Mix the Filling
    In a bowl, combine sautéed aromatics, cream cheese, feta, shawarma spice, parsley, salt, and pepper. Stir until creamy.
  • Stuff the Mushrooms
    Fill each mushroom cap with the spiced cheese mixture. Arrange on a parchment-lined baking tray.
  • Bake
    Lightly drizzle or spray with olive oil. Bake at 375°F (190°C) for 18–20 minutes until mushrooms are tender and tops golden.
