Blend lentils and oats in a food processor until combined. Add carrot, tomato paste, garlic, za’atar, salt, and pepper. Mix to form a dough.
Form into patties and pan-fry in olive oil for 4–5 minutes per side until golden.
Mix all slaw ingredients in a bowl until well coated.
Serve lentil patties hot with the slaw on the side or stuffed into warm pita.
