Zucchini Fries with Mint Labna Dip

- 1 cup (240 g) labna
- Zest of 1 lemon
- 2 tsp (10 ml) lemon juice
- 2 tbsp (about 5 g) fresh mint leaves, finely chopped
- Salt to taste

Instructions
- Prepare the Zucchini Fries:
- Preheat oven to 425°F (220°C).
- Slice the zucchini into finger-sized pieces and place them in a deep bowl.
- Add the chili olive oil, flour, za’atar, sumac, salt, and breadcrumbs. Mix well until the zucchini pieces are fully coated.
- Line a baking sheet with parchment paper and spread the coated zucchini fries in a single layer.
- Bake for 20-22 minutes, or until golden brown and crispy. Serve immediately.
- Make the Mint Labna Dip:
- In a bowl, whisk together the labna, lemon zest, lemon juice, and finely chopped mint leaves.
- Add salt to taste and sprinkle with Aleppo pepper for an extra kick.
- Serve the labna dip alongside the crispy zucchini fries.
