Zucchini Fries with Mint Labna Dip

These zucchini fries are the perfect combination of light, healthy, and tasty. Coated in aromatic spices like za’atar, sumac, and chili olive oil, they bake to a golden crisp. Paired with a refreshing mint labna dip, this dish is perfect for any occasion—whether as a snack or a side dish.

Ingredients

For the Zucchini Fries:

  • 4-6 medium zucchinis
  • 2 tbsp (30 ml) chili olive oil
  • 3-4 tbsp (24–32 g) all-purpose flour
  • 3 tbsp za’atar (add product link)
  • 2 tbsp sumac (add product link)
  • 2 tsp (10 g) salt
  • ¼ cup (30 g) breadcrumbs

For the Mint Labna Dip:

  • 1 cup (240 g) labna
  • Zest of 1 lemon
  • 2 tsp (10 ml) lemon juice
  • 2 tbsp (about 5 g) fresh mint leaves, finely chopped
  • Salt to taste
  • Aleppo pepper (add product link)

Instructions

  1. Prepare the Zucchini Fries:
    1. Preheat oven to 425°F (220°C).
    2. Slice the zucchini into finger-sized pieces and place them in a deep bowl.
    3. Add the chili olive oil, flour, za’atar, sumac, salt, and breadcrumbs. Mix well until the zucchini pieces are fully coated.
    4. Line a baking sheet with parchment paper and spread the coated zucchini fries in a single layer.
    5. Bake for 20-22 minutes, or until golden brown and crispy. Serve immediately.
  2. Make the Mint Labna Dip:
    1. In a bowl, whisk together the labna, lemon zest, lemon juice, and finely chopped mint leaves.
    2. Add salt to taste and sprinkle with Aleppo pepper for an extra kick.
    3. Serve the labna dip alongside the crispy zucchini fries.
