Zaatar Grilled Vegetables

Ingredients
- 1 zucchini, sliced lengthwise
- 1 eggplant, sliced
- 2 bell peppers, sliced
- 3 tbsp olive oil
- 2 tbsp zaatar
- Salt, to taste
Instructions
- Preheat Grill
Heat a grill or grill pan over medium-high heat.
- Season the Vegetables
Toss all sliced vegetables with olive oil, zaatar, and salt until well coated.
- Grill
Place vegetables on the grill and cook for 3–5 minutes per side, or until tender and slightly charred.
- Serve
Transfer to a platter and serve warm or at room temperature.
