Shawarma-Spiced Quinoa-Stuffed Tomatoes

Bright tomato shells filled with fluffy quinoa tossed in shawarma spice, herbs, and feta—vibrant, colorful, and satisfying.

Ingredients

  • 4 large tomatoes, cored
  • 1 cup cooked quinoa
  • 1 tsp chicken shawarma spice
  • 2 tbsp chopped parsley
  • 2 tbsp crumbled feta
  • Salt & pepper

Instructions

Season Quinoa
Toss quinoa with spice, parsley, feta, salt/pepper.

Stuff Tomatoes
Fill tomato shells with quinoa mix.

Bake
Place tomatoes in baking dish; bake 375 °F for 15–20 min.

Serve
Serve warm garnished with extra parsley.
