Shawarma-Spiced Quinoa Breakfast Bowl

Ingredients
- 1 cup quinoa, rinsed
- 2 cups water or broth
- 1 teaspoon olive oil
- ½ bell pepper, diced
- ½ cup spinach, chopped
- 1 teaspoon shawarma meat spice
- 2 eggs
- 1 avocado, sliced
- Salt and pepper
Instructions
- Cook Quinoa
Boil quinoa with water/broth, then simmer 12–15 minutes until fluffy.
- Sauté Veggies
Heat oil in pan; sauté pepper and spinach. Stir in shawarma spice until fragrant.
- Cook Eggs
Cook eggs to your liking (fried, poached, or scrambled).
