Shawarma-Spiced Lentil Soup

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, chopped
- 1 cup red lentils
- 1 teaspoon shawarma meat spice
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Juice of half a lemon
- Salt and pepper, to taste
- Fresh cilantro or parsley, for garnish
Instructions
- Sauté the Base
Heat olive oil in a pot. Add onion, garlic, and carrot. Cook until soft, about 5 minutes.
- Add Lentils and Spices
Stir in lentils, shawarma spice, turmeric, salt, and pepper. Cook 1 minute.
- Simmer the Soup
Add broth. Bring to a boil, then reduce to a simmer. Cook uncovered for 25 minutes until lentils are tender.
- Finish and Serve
Stir in lemon juice. Adjust seasoning if needed. Garnish with herbs and serve warm.
