Shawarma-Spiced Grilled Cheese with Pickled Onions

Ingredients
- 4 slices sourdough or rustic bread
- 2 tablespoons butter, softened
- 1 1/2 teaspoons shawarma meat spice
- 1/2 cup shredded mozzarella
- 1/2 cup shredded sharp cheddar
- 1/4 cup pickled red onions
- Optional: chili flakes or hot sauce
Instructions
- Make Shawarma Butter
Mix softened butter with shawarma spice until fully combined.
- Assemble the Sandwiches
Spread shawarma butter on the outer side of each bread slice. Layer cheese and pickled onions inside.
- Grill the Sandwich
Heat a skillet over medium-low. Cook sandwiches 3–4 minutes per side, pressing slightly, until golden and crisp.
- Serve
Cut in halves and serve hot with soup or a crunchy salad.
