Shawarma-Spiced Grain Bowl

Colorful, filling, and spiced to perfection. Tender chicken, roasted veggies, creamy hummus, and grains come together in this bowl—balanced, flavorful, and great for lunch prep.

Ingredients

  • 1 cup quinoa, cooked
  • 1 chicken breast, cubed
  • 1 tbsp chicken shawarma spice
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 2 tbsp olive oil
  • Salt & pepper
  • 1/2 cup hummus
  • 1/4 cup chopped cucumber
  • 2 tbsp chopped parsley

Instructions

Roast Vegetables & Chicken
Toss chicken and veggies with oil, spice, salt, and pepper. Roast at 400°F for 15–20 minutes.

Cook Quinoa
Prepare quinoa according to package directions and fluff.

Assemble Bowls
Divide grain, top with roasted chicken and vegetables.

Add Hummus & Garnishes
Add a scoop of hummus, sprinkle cucumber and parsley.

Serve
Drizzle with lemon juice if desired.

Serving Suggestions
Pair with pita bread or tzatziki on the side.
