Shawarma-Spiced Chickpea Salad with Yogurt Dressing

Ingredients
For the chickpeas:
- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp shawarma spice
- Pinch of salt
For the salad:
- 2 cups mixed greens
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
For the dressing:
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tsp olive oil
- Salt and pepper, to taste
Instructions
- Roast the Chickpeas
Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, shawarma spice, and salt. Spread on a tray and roast 10 minutes until lightly crisped.
- Make the Dressing
In a small bowl, whisk yogurt, lemon juice, olive oil, salt, and pepper.
- Assemble the Salad
In a large bowl, combine greens, tomatoes, cucumbers, and red onion. Top with warm chickpeas.
