Shawarma-Spiced Chickpea Salad with Yogurt Dressing

This hearty chickpea salad is packed with bold shawarma flavor and balanced by a tangy yogurt dressing. Roasted chickpeas take on a golden crispness while absorbing deep spice notes. Served over greens with fresh veggies, it’s a protein-rich vegetarian option that satisfies on every level.

Ingredients

For the chickpeas:

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp shawarma spice
  • Pinch of salt

For the salad:

  • 2 cups mixed greens
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced

For the dressing:

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • Salt and pepper, to taste

Instructions

  • Roast the Chickpeas
    Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, shawarma spice, and salt. Spread on a tray and roast 10 minutes until lightly crisped.
  • Make the Dressing
    In a small bowl, whisk yogurt, lemon juice, olive oil, salt, and pepper.
  • Assemble the Salad
    In a large bowl, combine greens, tomatoes, cucumbers, and red onion. Top with warm chickpeas.
  • Dress and Serve
    Drizzle with yogurt dressing and serve immediately.
