Shawarma Chicken Pasta Salad

A vibrant, cold pasta salad with shawarma-spiced chicken, fresh veggies, olives, and herbs. Perfect for picnics, BBQs, or a make-ahead lunch with global flair.

Ingredients

  • 8 oz rotini or penne, cooked and cooled
  • 1 chicken breast, cubed
  • 1 tbsp olive oil
  • 1 tsp chicken shawarma spice
  • 1/2 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pitted olives, sliced
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt & pepper

Instructions

Cook Chicken
Toss and sauté chicken until done, about 6–7 minutes.

Mix Salad
Combine pasta, chicken, cucumber, tomatoes, olives, parsley.

Dress
Whisk oil, lemon juice, salt, pepper; toss into salad.

Serve
Chill for 15 minutes for flavors to meld.

Serving Suggestions
Add feta cheese or toasted pine nuts for more texture.
