Roasted Chicken Thighs with Jordanian Thyme & Lemon
This aromatic roast chicken dish uses Jordanian thyme to infuse bright, herby notes into the meat, enhanced by lemon and garlic. The result is a crispy-skinned, juicy-centered meal.
Ingredients
- 6 bone-in chicken thighs
- 2 tbsp olive oil
- 1 tbsp Jordanian thyme
- Juice of 1 lemon
- 4 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Marinate the Chicken
In a large bowl, mix olive oil, lemon juice, garlic, Jordanian thyme, salt, and pepper. Add chicken and coat well.
- Roast the Chicken
Preheat oven to 400°F (200°C). Place chicken on a baking sheet and roast for 35 minutes, or until golden and cooked through.

Let rest for 5 minutes before serving with pan juices spooned over top.
