Loomi Spiced Rice-Stuffed Onions

These tender onions are filled with a zesty Loomi-spiced rice mixture, baked in tomato broth for an elegant and fragrant side dish. A creative way to elevate humble ingredients.

Ingredients

  • 4 large onions, peeled
  • 1 cup cooked rice
  • 2 tablespoons pine nuts
  • 1/4 cup chopped parsley
  • 1 teaspoon Loomi spice
  • 1/2 teaspoon allspice
  • Salt and pepper, to taste
  • 1/2 cup tomato purée
  • 1/2 cup water

Instructions

Prepare the Onions

Boil onions whole for 10 minutes. Let cool slightly, then carefully peel layers to create shells.

Make the Filling

Mix rice, pine nuts, parsley, Loomi spice, allspice, salt, and pepper in a bowl.

Stuff and Bake

  • Stuff onion layers with rice mixture and arrange in a baking dish.
  • Mix tomato purée and water, then pour around onions. Cover with foil.

Bake

Bake at 375°F (190°C) for 30–35 minutes until tender.

Serve

Serve warm with yogurt or lemon wedges.
