Loomi Spiced Cauliflower Tacos

These roasted cauliflower tacos deliver a tangy punch with Loomi spice, balanced by creamy avocado and a quick-pickled onion topping. A refreshing and citrusy twist on plant-based tacos that’s perfect for weeknight dinners or entertaining.

Ingredients

For the Cauliflower:

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon Loomi spice
  • 1/2 teaspoon garlic powder
  • Salt, to taste

For the Toppings:

  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 8 small corn tortillas

Instructions

Roast the Cauliflower

  • Preheat oven to 425°F (220°C). Toss cauliflower with olive oil, Loomi spice, garlic powder, and salt.
  • Spread on a baking sheet and roast for 25–30 minutes until golden and tender.

Pickle the Onions

Combine sliced red onion, vinegar, sugar, and salt in a small bowl. Let sit while cauliflower roasts.

Warm the Tortillas

Heat tortillas in a dry skillet or wrap in foil and warm in the oven for 5 minutes.

Assemble the Tacos

Layer roasted cauliflower, avocado slices, and pickled onions onto tortillas.

Serve

Garnish with fresh herbs or chili flakes if desired.
