Loomi-Spiced Carrot Hummus
Bright orange hummus gets a sunny boost from roasted carrots and the uncanny citrus tang of Loomi. It’s smooth, subtly sweet and sour, ideal for dipping pita or drizzling over grain bowls.
Ingredients
- 3 large carrots, peeled and cut into chunks
- 2 tbsp olive oil
- 1 tsp Loomi spice
- 1 can (15 oz) chickpeas, drained and rinsed
- ¼ cup tahini
- 2 tbsp lemon juice
- 1 garlic clove
- Salt and pepper, to taste
- Water (for consistency)
Instructions
- Roast carrots
Preheat oven to 400°F. Toss carrots with oil and Loomi, roast 20 minutes until soft.
- Blend hummus
In a processor, combine roasted carrots, chickpeas, tahini, lemon juice, garlic, and a pinch of salt. Blend until smooth, adding water if needed.
- Adjust seasoning
Taste and adjust salt and pepper. Transfer to a bowl.
