Loomi-Infused Beet & Feta Dip

This creamy, vibrant dip combines roasted beets with tangy feta and the smoky-citrus twist of loomi. It’s a show-stopping starter that earns its place on any mezze board.

Ingredients

  • 3 medium beets, scrubbed and trimmed
  • 2 tbsp olive oil
  • ½ tsp salt
  • 2 oz feta cheese
  • 1–2 loomi pods, crushed
  • 2 tbsp Greek yogurt
  • Zest & juice of ½ lemon
  • Fresh dill, for garnish

Instructions

Roast Beets

  • Preheat oven to 400°F.
  • Toss beets in olive oil and salt; wrap in foil and roast 35min until tender.

Blend Dip

  • Once cool, peel beets and roughly chop.
  • In a food processor, combine beets, feta, crushed loomi, yogurt, lemon zest & juice. Blend until smooth.

Serve

  • Transfer to a bowl, garnish with dill and a drizzle of olive oil.

Notes

Serving Suggestion:

Serve chilled with pita chips, cucumber slices, or grilled veggies.
