Loomi-Citrus Sourdough Focaccia

A fragrant focaccia studded with citrus slices, olive oil, and sprinkled with ground loomi for a bright, savory twist on classic Italian bread.

Ingredients

  • 4 cups bread flour
  • 1 tsp yeast
  • 1¾ cups warm water
  • 2 tsp salt
  • 2 tbsp olive oil + extra for drizzling
  • 1 lemon, thinly sliced
  • 1 lime, thinly sliced
  • 1 loomi, finely ground
  • Coarse sea salt & rosemary sprigs

Instructions

Make Dough

  • Stir flour, yeast, water, salt, and 2 tbsp oil.
  • Knead briefly, then let rest until doubled (~2 hr).

Shape & Top

  • Preheat oven to 425 °F.
  • Press dough into a greased pan, dimple surface with fingers.
  • Arrange citrus slices, drizzle oil, sprinkle loomi, sea salt, and rosemary.

Bake

  • Bake 20 min until golden.

Serve

  • Let cool slightly, slice, and serve warm.

Notes

Serving Suggestion:

Great with soup, cheese boards, or drizzled with extra virgin olive oil.
