Jordanian Thyme Eggplant Lasagna Rolls
Thin eggplant slices rolled with ricotta and Jordanian thyme, baked in tomato sauce—a Mediterranean twist on lasagna rolls.
Ingredients
- 2 eggplants, sliced lengthwise and grilled
- 1 cup ricotta
- ½ cup Parmesan
- 1 tsp Jordanian thyme
- 1 egg
- 2 cups tomato sauce
- Salt and pepper
Instructions
- Prepare the Filling
Mix ricotta, Parmesan, egg, Jordanian thyme, salt, and pepper.
- Assemble Rolls
Spread filling on eggplant slices, roll up, place in baking dish with tomato sauce.
- Bake
Bake at 375°F (190°C) for 25–30 minutes.
