Jordanian Thyme Egg & Potato Breakfast Hash
This one-skillet breakfast hash is loaded with crispy potatoes, eggs, and earthy Jordanian thyme. A rustic morning meal with bold herbal flavor.
Ingredients
- 2 tbsp olive oil
- 2 medium potatoes, diced
- 1 bell pepper, diced
- 1 small onion, diced
- 1 tsp Jordanian thyme
- 2 eggs
- Salt and pepper
Instructions
- Cook the Hash
In a skillet, sauté potatoes in olive oil for 10 minutes. Add onion, pepper, Jordanian thyme, salt, and pepper. Cook until golden.
- Add Eggs
Make two wells, crack in eggs. Cover and cook 5–6 minutes until whites set.
- Serve
Top with extra thyme and a sprinkle of Aleppo pepper.
