Jordanian Thyme Chickpea Patties with Yogurt Sauce
Savory chickpea patties with Jordanian thyme offer a herby twist on a falafel-like patty. Delicious served warm with a cooling yogurt sauce or inside pita bread.
Ingredients
- 1 can chickpeas, mashed
- 1 garlic clove, minced
- ¼ cup breadcrumbs
- 1 tbsp lemon juice
- 1 tsp Jordanian thyme
- 1 tbsp flour
- 1 egg (or flax egg)
- Oil for frying

Instructions
- Make the Patties
Mix chickpeas, garlic, breadcrumbs, lemon, thyme, flour, and egg. Form into patties.
- Cook
Pan-fry in olive oil 3–4 minutes per side until golden.
- Make Sauce & Serve
Stir together sauce ingredients. Serve with patties warm.
