Harissa-Spiced Apple & Carrot Muffins
These muffins surprise with warm harissa undertones supporting sweet apples and carrots. A mildly spicy, cozy morning bake that’s interesting without being overpowering.
Ingredients
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp Moroccan harissa spice
- ½ tsp cinnamon
- 1 cup grated carrots
- 1 small apple, peeled & grated
- ½ cup sugar
- ½ cup milk
- ¼ cup vegetable oil
- 1 egg
Instructions
- Preheat oven
Heat to 375 °F (190 °C). Line muffin tin.
- Combine dry
Whisk flour, baking powder, soda, salt, harissa, cinnamon.
- Combine wet
Beat sugar, milk, oil, egg until smooth. Stir in carrots and apple.
- Mix & fill
Fold wet into dry just until moistened. Divide into muffin cups.
- Bake
Bake 18–20 minutes until toothpick clean. Cool.
