Harissa Roasted Cauliflower Steak

Cauliflower steaks are the perfect blank canvas for bold flavors. Here, they’re rubbed with Moroccan Harissa spice and roasted until golden, then topped with a lemon-tahini drizzle for a balance of spice and creaminess.

Ingredients

  • 1 large cauliflower, cut into 1-inch steaks
  • 3 tbsp olive oil
  • 2 tsp Moroccan Harissa spice
  • 1/2 tsp salt

For the sauce:

  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp water
  • 1 garlic clove, minced
  • Salt to taste

Instructions

  • Prep the Cauliflower
    Preheat oven to 425°F (220°C). Brush cauliflower with oil and sprinkle with harissa and salt.
  • Roast
    Place on a lined baking sheet and roast 25–30 minutes, flipping halfway through.
  • Make the Sauce
    Whisk tahini, lemon juice, garlic, and water until smooth.
  • Serve
    Drizzle sauce over steaks and garnish with parsley if desired.
