Harissa-Roasted Beet & Orange Salad
Earthy roasted beets get a fiery upgrade with harissa, balanced by juicy citrus segments and tangy goat cheese. A gorgeous feel-good side or lunch option packed with flavor and color.
Ingredients
- 4 medium beets, scrubbed & quartered
- 2 tbsp olive oil, divided
- 1 tsp Moroccan harissa spice
- Salt & pepper, to taste
- 2 oranges, peeled & segmented
- ¼ cup crumbled goat cheese
- 2 tbsp chopped pistachios
- 2 tbsp chopped mint leaves
Instructions
- Roast beets
Toss beets with 1 tbsp oil, harissa, salt & pepper. Roast at 400 °F (200 °C) for 35–40 minutes.
- Assemble salad
Plate roasted beets with orange segments.
- Garnish
Sprinkle goat cheese, pistachios, and mint. Drizzle remaining oil.

Serve with crusty bread or as a starter alongside grilled lamb.
