Grilled Peaches with Aleppo–Tequila Honey Sauce

- 3 ripe peaches, halved and pitted
- 1–2 tbsp high-heat cooking oil

- Preheat the Grill
Preheat the grill to high heat.
- Prepare the Peaches
Brush the cut sides of the peaches lightly with oil.
- Grill the Peaches
Place the peaches cut side down on the grill and cook for about 5 minutes, until caramelized.
Flip the peaches and grill for an additional 5 minutes until tender.
- Make the Tequila Honey Sauce
In a small saucepan, simmer the tequila over medium heat until reduced by half (about 5 minutes).
Remove from heat and whisk in honey, Aleppo pepper, lime zest, lime juice, and a pinch of salt.
Let the mixture steep for 5 minutes, then whisk in the remaining tequila.
- Assemble and Serve
Slice the grilled peaches into wedges.
Drizzle with the tequila honey sauce and sprinkle with a touch of Aleppo pepper before serving.
