Fattoush Salad (Lebanese Bread Salad)
A fresh, vibrant Lebanese classic topped with crispy pita chips and tossed in a tangy dressing made with sumac, lemon, and pomegranate molasses. This salad is perfect for any occasion and embodies the essence of Middle Eastern flavors.
Ingredients
For the Salad:
- 2 heads romaine lettuce, washed and chopped
- 3 Persian cucumbers (or 1 large English cucumber), chopped
- 6 medium tomatoes, chopped
- 1 bell pepper, chopped
- 8 radishes, thinly sliced
- 4 green onions or 1 large red onion, sliced
- ½ cup (20 g) fresh parsley, chopped
- 2 large pita breads, cut into small pieces and deep-fried until golden
For the Dressing:
- 2 tbsp (16 g) sumac (link product)
- Juice of 2 lemons (about 6 tbsp / 90 ml)
- 4 tbsp (60 ml) pomegranate molasses
- 4 tbsp (60 ml) good-quality olive oil
- 1 tbsp (2 g) dried mint (optional)
- 1 garlic clove, minced
- Salt and black pepper to taste
Instructions
- Prepare the Vegetables:
Wash, dry, and chop the lettuce. Dice the cucumbers, tomatoes, and bell pepper. Slice the radishes and green onions (or red onion). Chop the parsley. Combine all in a large salad bowl.
- Fry the Pita:
Cut the pita into small pieces and deep-fry until golden and crispy. Set aside on paper towels to drain excess oil.
- Make the Dressing:
In a small bowl, whisk together the pomegranate molasses, lemon juice, minced garlic, sumac, dried mint (if using), salt, and pepper. Gradually drizzle in the olive oil while whisking until emulsified.
- Assemble:
Pour the dressing over the salad just before serving, toss well, and top with the crispy pita chips.
