Biryani-Spiced Stuffed Bell Peppers
Colorful bell peppers are stuffed with a spiced rice and lentil mixture flavored with biryani spices. A baked, fragrant, and satisfying vegetarian entrée.
Ingredients
- 4 bell peppers, tops cut and seeded
- 1 cup cooked rice
- 1/2 cup cooked lentils
- 1 onion, diced
- 1 tbsp Biryani spice blend
- 1/4 cup chopped cilantro
- 1/4 tsp chili powder
- 2 tbsp oil
- Salt to taste
Instructions
- Prepare the Filling
Sauté onion in oil until soft. Add lentils, rice, biryani spice, chili powder, and salt. Stir in cilantro.
- Stuff the Peppers
Fill each pepper with the rice mixture and place in a baking dish.
- Bake
Bake at 375°F (190°C) for 30–35 minutes until peppers are tender.
- Serving Suggestions
Top with yogurt and toasted pine nuts.
