Biryani-Spiced Lentil Soup
A warming, deeply satisfying soup that draws on the cozy spices of biryani to enhance simple lentils and vegetables. It’s hearty, nourishing, and full of flavor.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup red lentils
- 1 tsp Biryani spice
- 1/2 tsp turmeric
- 4 cups vegetable broth
- 1 cup diced tomatoes
- Salt and pepper, to taste
Instructions
- Heat oil in a pot and sauté onion and garlic until soft.
- Stir in lentils, Biryani spice, turmeric, and tomatoes.
- Add broth, bring to boil, then reduce heat and simmer for 25–30 minutes.
- Blend partially if desired, season to taste.
