Biryani-Spiced Lentil Soup

A warming, deeply satisfying soup that draws on the cozy spices of biryani to enhance simple lentils and vegetables. It’s hearty, nourishing, and full of flavor.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup red lentils
  • 1 tsp Biryani spice
  • 1/2 tsp turmeric
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • Salt and pepper, to taste

Instructions

  • Heat oil in a pot and sauté onion and garlic until soft.
  • Stir in lentils, Biryani spice, turmeric, and tomatoes.
  • Add broth, bring to boil, then reduce heat and simmer for 25–30 minutes.
  • Blend partially if desired, season to taste.

Top with fresh cilantro and a squeeze of lemon.
