Biryani-Spiced Chickpea Wraps
These flavorful wraps are filled with spiced chickpeas sautéed in biryani spice, paired with crunchy pickled onions and a cooling yogurt sauce. They offer a portable twist on the bold flavors of biryani and make an ideal plant-based lunch or quick dinner.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 2 tsp Biryani spice blend
- 1/2 tsp salt
- 1/4 tsp turmeric
- 4 flatbreads or wraps
- 1/2 cup shredded lettuce
- 1/4 cup pickled red onions
- 1/2 cup yogurt
- Juice of 1/2 lemon
- Pinch of cumin
Instructions
- Sauté the Chickpeas
Heat olive oil in a pan. Add chickpeas, biryani spice, salt, and turmeric. Sauté for 5–7 minutes until slightly crispy.
- Make the Yogurt Sauce
Mix yogurt, lemon juice, and cumin in a small bowl.
- Assemble the Wraps
Warm flatbreads, then layer chickpeas, lettuce, pickled onions, and a drizzle of yogurt sauce. Roll and serve.
