Biryani-Spiced Chickpea Salad

This vibrant chickpea salad is a no-cook meal packed with bold flavor and nutrition. The Biryani spice blend adds warm, aromatic depth to the refreshing mix of herbs, crunchy vegetables, and citrus. It’s perfect for a light lunch or a picnic side.

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1/2 red onion, finely diced
  • 1 small cucumber, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 1/2 tsp Biryani spice
  • Salt and pepper, to taste

Instructions

  • In a large bowl, combine chickpeas, red onion, cucumber, parsley, and mint.
  • In a small bowl, whisk together lemon juice, olive oil, Biryani spice, salt, and pepper.
  • Pour dressing over salad and toss well to combine.
  • Let sit 10–15 minutes before serving to allow flavors to meld.
