Biryani-Spiced Chickpea Salad
This vibrant chickpea salad is a no-cook meal packed with bold flavor and nutrition. The Biryani spice blend adds warm, aromatic depth to the refreshing mix of herbs, crunchy vegetables, and citrus. It’s perfect for a light lunch or a picnic side.
Ingredients
- 2 cans chickpeas, drained and rinsed
- 1/2 red onion, finely diced
- 1 small cucumber, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 1/2 tsp Biryani spice
- Salt and pepper, to taste
Instructions
- In a large bowl, combine chickpeas, red onion, cucumber, parsley, and mint.
- In a small bowl, whisk together lemon juice, olive oil, Biryani spice, salt, and pepper.
- Pour dressing over salad and toss well to combine.
- Let sit 10–15 minutes before serving to allow flavors to meld.
