Biryani Spiced Cauliflower Steaks
Whole cauliflower steaks take on an exciting new dimension when roasted with biryani spice. The outer char and spice crust contrast perfectly with the tender center, creating a vegetarian showstopper.
Ingredients
- 1 large cauliflower, sliced into thick steaks
- 3 tbsp olive oil
- 1 tbsp Biryani spice blend
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 lemon, for squeezing
Instructions
- Prep the Cauliflower
Preheat oven to 400°F (200°C). Arrange steaks on a baking sheet.
- Season and Roast
Mix olive oil with biryani spice, salt, and pepper. Brush both sides of steaks and roast 30 minutes, flipping once, until golden.
- Finish and Serve
Squeeze lemon juice over just before serving.

Serve on lentil pilaf or with a mint-yogurt sauce.
