Biryani-Spiced Butternut Squash Soup

Creamy and comforting, this soup gets a boost from Biryani spice, lending warmth and gentle heat. It’s a cozy dish perfect for cool weather or elegant dinners alike.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 medium butternut squash, cubed
  • 1 tsp Biryani spice
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Coconut milk, for garnish

Instructions

  • Heat olive oil in a pot and sauté onion and garlic until translucent.
  • Add squash and Biryani spice, cook for 2–3 minutes.
  • Pour in broth, bring to a boil, then reduce heat and simmer 20–25 minutes.
  • Blend until smooth. Season to taste.

Top with a swirl of coconut milk and toasted seeds.
