Biryani-Spiced Butternut Squash Soup
Creamy and comforting, this soup gets a boost from Biryani spice, lending warmth and gentle heat. It’s a cozy dish perfect for cool weather or elegant dinners alike.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 medium butternut squash, cubed
- 1 tsp Biryani spice
- 4 cups vegetable broth
- Salt and pepper, to taste
- Coconut milk, for garnish
Instructions
- Heat olive oil in a pot and sauté onion and garlic until translucent.
- Add squash and Biryani spice, cook for 2–3 minutes.
- Pour in broth, bring to a boil, then reduce heat and simmer 20–25 minutes.
- Blend until smooth. Season to taste.
