Aleppo Pepper Roasted Chicken

This whole roasted chicken is a celebration of bold spices and juicy texture. Aleppo pepper lends a mellow heat and deep red hue, while garlic and lemon create a beautifully aromatic crust. Ingredients

  • 1 whole chicken (about 4 lbs.)
  • 2 tablespoons olive oil
  • 1 tablespoon Aleppo pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon

Instructions

Preheat the Oven

  • Preheat oven to 375°F (190°C).

Make the Spice Rub

  • In a small bowl, mix olive oil, Aleppo pepper, paprika, garlic powder, salt, black pepper, and lemon juice.

Season the Chicken

  • Rub mixture all over the chicken, including under the skin and inside the cavity.

Roast

  • Place chicken in a roasting pan and bake for 1 hour 20 minutes, or until internal temperature reaches 165°F (74°C).

Rest and Carve

  • Let rest for 10 minutes before carving.

Serving Suggestion

Serve with Aleppo pepper roasted vegetables, flatbread, and a garlic yogurt sauce for a complete meal.
